Beetroot & Fetta Mousse with Green Apple & Rösti

SERVES ABOUT 15 PEOPLE

INGREDIENTS

Beetroot Mousse

  • 1 cup of baked or boiled beetroot
  • 3 tbs feta
  • 1 tsp tahini
  • 1 tsp pomegranate syrup
  • 1 tsp olive oil
  • A spritz of lemon juice
  • Salt and pepper, to taste

Rösti

  • 3 potatoes, par boiled & grated (boil them until still waxy and firm in the middle)
  • 1 egg, whisked
  • 2 tbs corn flour
  • 1 tbs butter, melted
  • 1 tbsp olive oilSalt and pepper

To Serve

  • 5 slices smoked salmon
  • 1 green apple
  • Juice of 1 lemon and peel
  • Fresh dill & paper thin sliced julienne lemon peel


METHOD:

To make the Beetroot Mousse:

Place all of the ingredients into a food processor and blitz until smooth and creamy.

To make the Rösti:

  1. In a large bowl, mix grated potato with egg, flour and butter. Season with salt and pepper.
  2. Heat the oil in a frying pan over
    medium heat.
  3. Add heaped tablespoonfuls of the potato mixture and flatten slightly.
  4. Cook for 1-2 minutes each side or until crisp and golden then drain on a paper towel.
  5. Repeat with the remaining potato mixture and allow to cool slightly.

To Serve:

  1. Peel apple and cut into matchsticks.
  2. Drain green apple and season with salt and pepper and a splash of lemon juice.
  3. Tear smoked salmon into bite sized pieces.
  4. Top each Rösti with a spoon full of beetroot mousse, apple and smoked salmon and finish with a squeeze of lemon and a sprinkle of dill and lemon rind.
