Soaked Oats

Preparation time: 10 minutes  Serves: 1

Ingredients

280g natural greek-style yoghurt
200ml apple juice
65g shredded coconut
10g oats
80g almonds, chopped, plus extra to serve
70g hazelnuts, chopped, plus extra to serve
1 tablespoon white chia seeds
¼ teaspoon ground cinnamon
2 pink lady apples, grated
2 figs, halved
Coconut yogurt, to serve
honey, to serve

Method

Place the yoghurt, apple juice, coconut, oats, almond, hazelnut, chia and cinnamon in a large bowl and mix well to combine. Cover with gladwrap and refrigerate overnight.

Add the apple and stir to combine. Divide between bowls and top with the coconut yoghurt, honey, extra almond, hazelnut and fig to serve.
